Gathpacho

Living in Spain I got to really be in my essence foodwise. One of the freshest, crispest things you can eat to withstand the blazing sun in Barcelona is to eat Gaspacho. This is a cold soup, with a tomato base, and it is de-lish.

  
Oh and super simple!

This recipe is an approximation, as all my other recipes because I believe the kitchen should be a place for creative freedom, not following recipes to the decimal point. And due to this, if you want to make this, but don’t have as many bell peppers, or have some other yummy vegetables at home, throw those in instead! No need to be shy!

So what do you need for this Spanish delicacy?

2 Bell Peppers- I had red and yellow

1 Cucumber – peeled

A couple of peeled cherry tomatoes

3 cups Tomato juice

1 Garlic clove

1/2 Jalapeno (If you can handle it, but do have a little for the flavor)

Worcestershire sauce -for added umami taste- a few drops will do!

Tabasco, Salt and Pepper- to taste

Blitz in the mixer until smooth, and chill in the refrigerator 1-2 hours, or throw in some icecubes ( yes, really).

My family likes a bit of a crunch in it so we chopped up some cucumber, bell peppers, tomatoes to top it off.

And so it didn’t become too healthy, we fried some croutons in some salted butter.
