Whenever I’m hungry but don’t feel like cooking anything, or having to deal with loads of dishes, I make Greek salad.
It doesn’t even matter how you chop the vegetables, I like mine sliced though! All you need is:
- Red onion
- Feta cheese
- Olive oil
- Lemon juice
- Kalamata (or your favorite) olives, if you’re lucky enough to have them lying around- I didn’t!
This is the time to have fresh herbs in the garden so I added some chopped mint and parsley!
I could eat this everyday and not get tired, and if you want it a little more filling you can fry up some halloumi!
